Summer Fruit Pizza

Denise sent in this one too. And I think it would be great to make for our Featured Recipes!

1 roll sugar cookie dough
8 ounces cream cheese – bring to room temperature to soften.
1/3 cup sugar
1/2 teaspoon vanilla
1/4 cup orange marmalade
1 tablespoon water (hot)
Fruit – pineapple, strawberries, kiwi, Mandarin oranges, raspberries….

Preheat oven to 375. Grease pizza pan.
Slice cookie dough into discs. Arrange around pan overlapping each other. Press dough to cover pizza pan.

Bake 10-12 minutes. Let cool.

Combine cream cheese, sugar & vanilla until smooth. Spread mixture over cookie.
Arrange your fruits of choice on cookie.

Mix marmalade & water. Brush over fruit. (will help keep fruit from browning)



***You can substitute peach or apricot jelly for marmalade.

You can also keep fruits from browning by dipping them in pineapple juice first.

You can also use a fruit flavored cream cheese.

These fruit pizzas are amazing. I have also made them with the sugar cookie crust, then spread the cream cheese powder sugar mixture on top of the cooled crust and then on top of that you can use a can of the canned pie filling. I like the strawberry, cherry and blueberry. SOOOOO GOOD!!
