Quick & Easy Salsa Chicken

2 skinless, boneless chicken breasts
1 large onion – rough cut into chunks
2 large green peppers (or red) – cut into chunks
1 can of corn
1 ½ jars of your favorite salsa (or 2 small jars)
2 cups cooked rice
1 pkg taco seasoning


Cook rice – keep warm.
Wash chicken. Cut into chunks.
Cook chicken in skillet – season with taco seasoning. Drain drippings when chicken is cooked through.
Add in onion, green or red pepper, corn & salsa. Simmer 10-15 min medium heat until veggies cooked.

Serve over rice.

***You may want to add in cracked red pepper to spice up the dish to your taste.
