Mango Pineapple Salad

This is our first Non-blogger recipe & it's from Teapotts.




As some of you may know the Teapotts family is in transition from a cooked foods diet to a raw mostly vegan diet.
We have no moral issue with eating meat we just feel better when we don't.
Anyway, Its sometimes hard to combine raw food in interesting ways (at least when you are new to this lifestyle).
We love to visit Harry's (as seen on Food Network) here in Atlanta and taste all the yummy delights they have. So we were there just this week when they had for sampling Mango-Pineapple Salsa.
I fell in love instantly..so here it is for y' all to try,
You can have it on chips or on fish (on top of broiled fish would be so good) As I said we want to be mostly vegan so fish is o.k.

3 large mangos
1 lb. tomatillos, husked, rinsed, and chopped (these are the little green tomato looking produce with an outer husk)
1 c. chopped fresh cilantro.
about 2 T. minced jalapenos (more or less to taste)
2 T. fresh lime juice
2 garlic cloves, minced
2 c. chopped pineapple (fresh is best)

mix together all but pineapple, cover and chill. Add pineapple 1 hour prior to serving. Add salt and pepper to taste. Enjoy

Oh, I just had a thought, it just might be good on grilled chicken :)
