Roasted Potato Salad

This is a new favorite of mine!

5 lb bag of red potatoes
Green Onions
Fiesta Ranch Packet
Original Ranch Packet
1 cup of sour cream
1 cup of mayo
Bacon pieces
Olive Oil
Garlic

Preheat oven to 425
Wash & Dice potatoes, mix the ranch packets with olive oil. Line a baking pan with foil. Toss potatoes in the oil mixture and place on pan. Sprinkle garlic over the potatoes. Bake at 425 degrees for 40 minutes.

While potatoes are cooking, mix the sour cream & mayo and dice the green onions.
Once potatoes are cooked, but still a little firm (so they don't turn to mush) take from oven and mix the sour cream & mayo dressing with potatoes. Toss in the bacon and onions and serve warm.

Very easy. You can add more or less sour cream and mayo, depending on your taste buds. You can also use 1/2 the bag and have enough for the family meal. I just made a big turn of it for a holiday party.
