Chocolate Presents

Every year, my husband's work has a bake off. Last year, I entered my peanut butter pie and won 3rd place. But this year... I am shooting for first baby! Here is what we came up with:

Ingredients for brownies:

3/4 c. margarine or butter, melted
1 1/2 c. sugar
1 1/2 tsp. vanilla
3 eggs
3/4 c. self-rising flour
1/2 c. cocoa

Ingredients for filling:

8 oz. cream cheese, softened
1 stick butter, softened
1 box confectioners sugar, plus some

Pre-heat oven to 350. Mix brownie batter as directed. Pour batter into a 9 x 13 pan greased or lined with wax paper. Bake for 12-15 min. until toothpick test comes back clean.

Mix another batch of brownie batter. When first pan is completely cooled, remove from pan (if you use two different pans, make sure they are approx size). Then bake second brownie for 12-15 min.

While the second brownie is cooling, mix filling. Beat butter and cream cheese together, and then gradually add powdered sugar until all is well blended. Then chill until you are ready to use it.

Once the brownies are cooled, spoon filling onto one and spread evenly. Then place second brownie on top. Place in freezer until firm or hard (I did this overnight).

Once frozen, remove brownies and cut into strips. Then cut each strip into rectangles or squares. Be as neat as possible. I found it best, once the strips were cut, to turn the strips on their sides to avoid filling squeezing out of place and maintain shape.

Place squares on wax paper. Melt chocolate almond bark, and pour carefully over each square. Let cool thoroughly. Then cut away excess chocolate around the bottom. Tie bows around each package for presentation purposes!
