Cheesy Potato Soup




We have a new recipe sent in by Mel.

In pot on med-high heat add in this order....

3c water
1c diced celery
1c diced carrots
1/2 c diced onions
4 cups diced potatoes

Cook until the water is no longer clear and the ingredients are tender. While you are waiting melt in a saucepan...

1/2 c butter and then whisk in 1/2 c flour- let cook for a min

Once the veggies are ready add...

butter/ flour mixture
2 tsp salt
1 quart of milk
2- 3/4 inch slices of Virginia ham from the deli, cubed (tell them how thick to cut it at the deli counter) 1/2 pound of Velveeta cheese

Cover and heat on med to low until cheese is melted and soup is heated

Serve with a crusty bread
