Cool Oreo Dessert

This fun recipe if from Sarah.

This is a delicious recipe that is perfect for a hot summer day!

oreo cookie crumbs
1 - can of frozen raspberry juice concentrate (completely thawed)
1- 8 ounce package of cream cheese (I prefer the light cream cheese)
2- tablespoons of icing sugar
1 - tub of cool whip (once again, I prefer the light cool whip)

Make a oreo cookie crumb crust on the bottom of an 9 x 13 pan. Place the crust in the freezer while you make the rest of the dessert.

In a blender, combine raspberry juice, cream cheese, and icing sugar. Blend on high speed until mixture is completely blended.

Pour into a large bowl and add the cool whip. Stir until well blended.

Pour mixture on top of crust and freeze at least 4 hours, but I think it is better if you leave it freeze over night.

Remove from freezer 15 minutes before serving. Store leftovers in the freezer.

For different variations, try a graham cracker crust or different flavors of juice.

This recipe is so light and delicious and reminds me of sorbet or ice cream or something. It is perfect for a hot day.
