Spinach & Cheese Enchiladas
Another one from Traci. Traci cooks like I do & that means no measurements. You just have to guess-ti-mate It's the Weight Watchers Recipe with a Twist.

1 box frozen spinach
1 cup mozzarella cheese
15 oz. Ricotta cheese
oregano
basil
cilantro
low carb or wheat tortillas
1 can of enchilada sauce
Combine frozen spinach, mozzarella cheese, and ricotta cheese in a bowl with oregano, basil, cilantro, and other seasonings to taste.
Spoon mixture into low carb or wheat tortillas.
Arrange in a 13x9 pan. Pour one can of enchiladas sauce over the dish. Add another sprinkling of mozzarella cheese over the top and bake covered for 20 minutes on 350.
Note: If your family loves cheese, you can also pour a can of Campbell's Cheese Soup over the top of the enchiladas.
