Pineapple Casserole

How cool we've had our first recipe request filled! Neat-o!

And it's from Bomba.

Here is the recipe. It is a favorite of mine. Fast and easy and very tasty.

2 Large Cans of Crushed Pineapple or Chunks (drained)
6 tbsp. Flour
1 Cup of Sugar
2 Cups of grated Sharp Cheddar Cheese (Fine Grated works best)
1 Stick of Butter (use 2 sticks if using 2 stacks of crackers)
Ritz Crackers (1 to 2 stacks)

Mix first four ingredients together and pour in a large casserole dish. (butter or use Pam on dish).
Melt butter and crumble the crackers into butter and spread on top of pineapple mixture. Bake at 350 for 20-30 minutes.

I do love this. It is the best. Sweet and Salty. As soon as I get moved in I am going to make some and get the house smelling good.

I made this this weekend for Memorial Day! It was awesome. Everyone ate it up... and I got to keep the leftovers! :)
