Taco Lasagna

Here's another good one from Maryland Mommy.

1 lb. ground beef (or ground turkey)
1/2 c. onions (diced)
1/2 c. green pepper (diced)
1 packet taco seasoning
2/3 c. water
1 can black beans (rinsed & drained)
1 can black olives (diced)
1 can diced tomatoes (undrained)
1 can refried beans
12 small flour tortillas
3 cups shredded Mexican cheese

Cook meat, onions & peppers together. Drain meat & add taco seasoning, water & black beans. Saute until most of the water is absorbed.

In greased 9 x 13 dish, line 4 small tortillas. Spread 1/2 can of refried beans, 1/2 meat & black bean mixture, 1/2 can black olives, 1/2 can tomatoes & 1 cup of cheese. Repeat that step.

Then, add 4 flour tortillas to the top & top with your last cup of cheese.

Bake at 350 for 25-30 minutes. We like to serve it with salsa & sour cream on top. Enjoy!
