Quick & Easy Spinach Quiche

This recipe comes from Chichimama.

Yummy and easy!


1/2 cup egg beaters
2 eggs (or 4 eggs, no egg beaters)
10-16 ozs frozen spinach thawed and squeezed dry
1 8oz package shredded cheddar cheese (I use the low-fat)
1/2 cup milk (I use skim)
1/2 cup mayo (I use the low fat here as well)
1 ready made pie crust

Mix all of the ingredients together, pour into the pie shell. Cover and bake at 400 for 45 minutes. Uncover and bake an additional 15 minutes. Remove and let it set for 10 to 15 minutes. Serve and enjoy!

I frequently make it as a crustless quiche as well and it turns out great that way too. Just make sure to spray the pie plate really well with Pam or the like.
