Granny's Cobbler

This is one of my Granny's recipes. She was the best cook & quite known for it. She even made things for the Mayor... Exlax cake was his favorite, but that's another story. ;)
My Aunt Diane makes a strawberry one that is out of this world!

This recipe would be great to make for Father's Day or the 4th of July & eaten with homemade ice cream....Oh man, that sounds good!

1 cup self-rising floor
1/2 cup milk
1 stick butter/margarine
1 cup sugar
1 can fruit pie filling or 2 cups of fresh fruit.


Preheat oven to 350 degrees. Heat 1/2 stick butter/margarine & fruit until hot. Put other 1/2 stick butter/margarine in casserole dish & melt in the oven. Mix flour, sugar & milk in a bowl. Pour in casserole dish & add fruit on top. Bake until done; crust will rise over the fruit. Serve warm with ice cream.

***I will also take the cobbler out of the oven after the batter has come up to the top & sprinkle sugar over it. Place back in the oven until it's done. It makes the crust a little bit more crunchy. So good!

You can also use canned fruit in heavy syrup. Don't drain the fruit, use the juice also. Just spoon it all over the top of the batter.

If I use fresh fruit, I will cook it till it is tender with some sugar so you will have some juice. I don't like a dry cobbler.
