Fiesta Fish

Here's another one from Denise.


2 fish fillets ( works best with whitefish like orange roughly, sea bass or cod)
2 tablespoons lime juice
½ cup salsa

tear off enough aluminum foil to make a foil "packet" for each fish fillet.
place fish on foil.
top with 1 tablespoon lime juice & cover lightly with salsa. (season with salt & pepper or other seasonings as you like)
close up foil packets. place on baking sheet.
place in 350 over for approx 15-20 min depending on thickness of fish.

Remove fish from packets to serve. Serve with steamed veggie or rice pilaf or a summer risotto.
