Flank Steak with Lime Marinade

This recipe was sent in by Stephanie.

Here is one of my favorite summer recipes to make on the grill:

Serves 4

1/3 cup fresh lime juice (about 4 limes)
2 tablespoons soy sauce
3 scallions, chopped (about 1/3 cup)
2 tablespoons minced peeled fresh ginger
1/2 teaspoon red pepper flakes
1 1/2 lbs. flank steak
dashes of salt and pepper



In a re-sealable plastic bag, combine the lime juice, soy sauce, scallions, ginger and red-pepper flakes. Add steak, and seal bag. Marinate in the refrigerator, turning occasionally, up to 1 hour.



Heat grill to medium-high; lightly oil grates. Remove steak from marinade, season with salt and pepper. Place on grill and cover. Cook, turning once, until meat is desired doneness. Depending on how thick the meat is, generally grill for 6 to 8 minutes per side for medium. Let rest 10 minutes before slicing thinly.
