Breakfast Casserole

• 1 (12 ounce) package fresh breakfast sausage, cooked, drained and crumbled
• 4 cups cubed day-old bread
• 2 cups shredded sharp Cheddar cheese
• 24 ounces of milk Evaporated Milk
• 10 large eggs, lightly beaten
• ground black pepper to taste
Directions
1. GREASE 13 x 9-inch baking dish. Place bread in prepared baking dish. Sprinkle with cheese. Combine evaporated milk, eggs, dry mustard, onion powder and pepper in medium bowl. Pour evenly over bread and cheese. Sprinkle with sausage. Cover; refrigerate overnight.
2. PREHEAT oven to 325 degrees F.
3. BAKE for 55 to 60 minutes or until cheese is golden brown. Cover with foil if top browns too quickly.

Cheesecake Pancakes

1   package (8 oz) cream cheese
2 cups Original Bisquick® mix
1/2 cup graham cracker crumbs
1/4 cup sugar
1 cup milk
2 eggs

Strawberry Syrup
1 cup sliced fresh strawberries
1/2 cup strawberry syrup for pancakes


Slice cream cheese lengthwise into four pieces.
Place on ungreased cookie sheet;
cover and freeze 8 hours or overnight.
Brush griddle or skillet with vegetable oil,
or spray with cooking spray;
heat griddle to 375°F or heat skillet over medium heat.
Cut cream cheese into bite-size pieces; set aside.
In large bowl, stir Bisquick mix, graham cracker crumbs,
sugar, milk and eggs with whisk or fork until blended.
Stir in cream cheese.
For each pancake, pour slightly less than 1/3 cup
batter onto hot griddle.
Cook until edges are dry.

Turn; cook other sides until golden brown.
5In small bowl, mix strawberries and syrup;
top pancakes with strawberry
mixture.

If you can't find strawberry syrup
just top with fresh strawberries & whipped cream

Frozen Coffee Cooler

A recipe from Nikki.

6 cups ice cubes
4 cups brewed coffee, cooled
1 cup coffee liqueur
3/4 sugar
1 tsp ground cinnamon
1 cup half-and-half or milk
Garnished:whipped cream, ground cinnamon

-Process half of first 5 ingredients in a blender until smooth. Pour coffee mixture into a large pitcher. Repeat with remaining half of first 5 ingredients, and pour into pitcher.
- Stir half-and-half into coffee mixture, and garnish, if desired. Serve immediately. Yield: about 8 cups.

I omit the coffee liqueur, but you can make it according to your tastes. I also cut the recipe in half.

Hashbrown casserole

I've been craving hashbrown casserole. This one sounds yummy and easy!

2 pounds frozen hash browns -- thawed
1/2 cup margarine -- melted
1 can cream of chicken soup -- condensed
1 pint sour cream
1/2 cup onion -- chopped
2 cups cheddar cheese -- shredded
1 teaspoon salt
2 cps Cornflakes -- crushed
1/4 cup margarine -- melted

COMBINE next 7 ingredients and mix with hashbrowns. PUT all in a 3 quart casserole. SAUTE cornflakes in butter and sprinkle on top. COVER and BAKE at 350 degrees for about 40 minutes.

Cherry/Almond Coffee Cake

Denise sent in this recipe!




1 box white cake mix - the kind for double pan.
1 cup sour cream
3 eggs
1 teaspoon cinnamon
1/4 cup water

Mix all of these ingredients together and pour into 9x13 pan (floured and prepared)

1 can cherry pie filling.

Place dollops of cherry pie filling across top of batter.

Bake at 350 for 30 min or until golden brown. Sprinkle with almond slivers once out of oven. Let cool.

1 cup confectionery sugar,
1½ teaspoons milk
½ teaspoon almond extract

Blend all ingredients. Drizzle over top of coffee cake once cooled.

Breakfast Pizza's

I saw this on Talk of Alabama today and it looked really yummy and easy. There's so many other things you can do with this recipe. Hope you enjoy!


Prep: 20 min., Cook: 10 min., Bake: 20 min.

In order to make this recipe more heart healthy, we decreased the saturated fat and cholesterol by using egg substitute, lean ground turkey sausage, reduced-fat Cheddar cheese, and fat-free milk.

Yield
Makes 12 servings (serving size: 1 pizza cup and 2 tbsp. pizza sauce)

Ingredients
1/2 pound lean ground turkey sausage
2 (13.8-oz.) cans refrigerated pizza crust dough
1/2 cup frozen hash browns, thawed
1/2 cup (2 oz.) shredded 2% reduced-fat sharp Cheddar cheese
1 1/4 cups egg substitute
1/2 cup fat-free milk
1/8 teaspoon pepper
2 tablespoons grated Parmesan cheese
1 1/2 cups pizza sauce

Preparation
1. Cook sausage in a large skillet over medium-high heat 10 minutes or until sausage crumbles and is no longer pink. Drain well on paper towels, and set aside.

2. Roll or pat 1 can pizza dough into a 15- x 10-inch rectangle on a lightly floured surface; cut into 6 (5-inch) squares. Press squares into lightly greased muffin cups, skipping every other muffin cup. Repeat procedure with remaining can of pizza dough.

3. Spoon sausage evenly into crusts; sprinkle evenly with hash browns and Cheddar cheese.

4. Stir together egg substitute and next 2 ingredients; pour evenly into pizza cups, and sprinkle with grated Parmesan cheese.

5. Bake at 375° for 18 to 20 minutes or until golden. Serve with pizza sauce.

Yankee Spoilers

I found this recipe on Proverbs 31 Ministries site. They were doing a recipe swap at the beginning of March and I lurked around and got a few! Wink!!

1 cup cooked grits (1 cup water and 3 Tablespoons of "Quick Grits")
1 3/4 cup milk, heated in the microwave
1 stick of butter, melted
4 eggs, beaten
1 box Jiffy Corn Muffin Mix
1 lb. Jimmy Dean Hot Sausage, browned with grease drained off
1 1/2 cups shredded cheddar cheese

Combine all ingredients except cheese. Pour into a greased casserole dish. Top with cheese. Bake at 325 for 45-50 minutes.

Razzy Banana Breakfast Cake

I stumbled upon this recipe last night (Razzy caught my eye), while searching the web. It sounds really good to me & I'll probably get the stuff to make it next time I buy groceries. I'll let you know how it turns out.





3/4 cup sugar
1/2 cup butter
3 eggs
1 ripe banana, mashed
1/4 cup milk
1/4 cup sour cream
1 tsp almond extract
2 cups all-purpose flour
1 1/2 tsp baking powder
1 1/2 cups fresh raspberries
Frosting:
1 cup confectioners' sugar
1/4 cup softened butter
1 to 2 tsp fresh lemon juice

Directions
Preheat oven to 350F. Lightly butter a 9" square baking pan.
In a large bowl, combine sugar, butter, eggs and banana. Beat until light and fluffy. Beat in milk, sour cream and almond extract. Stir in flour and baking powder just until moistened.
Pour half of batter into prepared pan and top with raspberries. Pour remaining batter over berries.
Bake for 50 to 55 minutes. Remove from oven and let cool.
In a small bowl, beat confectioners' sugar with butter and stir in just enough lemon juice to make a spreading consistency. Spread over warm cake.

Breakfast Sausage Rolls

This recipe comes from one of my best friend's mother. I used to go home with her for weekends, and her mom would make these for us at breakfast. I called her mom up recently to ask for this recipe so I could make them for a baby shower. I ended up talking and laughing with her for an hour! So many memories!

1 box Bisquik
1 lb. Tennessee Pride sausage (this is the brand she recommends)
milk

Make sure sausage is at room temp.
Pour bisquik into large bowl.
Add milk until it looks like biscuit dough (will be slightly sticky).
Pour dough onto floured wax paper.
Kneed until dough is stiff or until dough won't stick to roller.
Roll dough out.
Take sausage and place spoonfuls on the dough until you've used all.
Then roll the dough into a large roll.

Put the roll into the freezer until stiff but not neccessarily frozen.
Then slice the roll into 1/2" or less slices.

Bake at 425 until brown on the bottom. That will happen first because the sausage will cook faster than the dough.
Then broil the top to brown them.

Serve them warm with jelly, jam, syrup, or honey. They are delicious!
Once you've sliced the entire roll, you can freeze whatever portion you don't want to cook for up to 3 months!

Ziplock Omelets

(This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!!)

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and shake.

Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.

Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and it is a great conversation piece.

Imagine having these ready the night before, and putting the bag in boiling water while you get the fruit coffee cake ready.

And in 13 minutes, you've got a nice omelet for a quick breakfast!!!

Quick & Easy Spinach Quiche

This recipe comes from Chichimama.

Yummy and easy!

~~~~~~~~~~~~~~~~~~~~~~~~~~~

1/2 cup egg beaters
2 eggs (or 4 eggs, no egg beaters)
10-16 ozs frozen spinach thawed and squeezed dry
1 8oz package shredded cheddar cheese (I use the low-fat)
1/2 cup milk (I use skim)
1/2 cup mayo (I use the low fat here as well)
1 ready made pie crust

Mix all of the ingredients together, pour into the pie shell. Cover and bake at 400 for 45 minutes. Uncover and bake an additional 15 minutes. Remove and let it set for 10 to 15 minutes. Serve and enjoy!

I frequently make it as a crustless quiche as well and it turns out great that way too. Just make sure to spray the pie plate really well with Pam or the like.

Biscuit Breakfast Calzones





Here's a recipe from Jamie.

2 cans biscuits
10 eggs
pgk bacon or sausage
cheese

Use flour to roll out biscuits. Scramble eggs and
cook bacon or sausage. In the middle of each rolled
out biscuit, place egg, meat and cheese. Then fold in
half and press sides together. For pretty edges, use
fork tongs. When done, brush butter over top. Bake
at 350 for 10-12 minutes, or until golden brown.

When made with sausage, the breakfast calzone is
awesome with salsa!

Cream Cheese Squares

Jamie just sent in this recipe.

I tried these out just this week! Love them! So good
with coffee at breakfast or as a dessert.

Prep Time: 15 min.
Total Time: 40 min.
Servings: Approx 24

2 cans (8 oz) crescent rolls
2 pkg (8 oz) cream cheese, softened
1 tsp vanilla
1 egg, slightly beaten
3/4 cup sugar
2 tbsp ground cinnamon

1. Preheat oven to 350.
2. Unroll 1 can of crescent roll dough and press onto
bottom of greased 13 x 9 baking pan to form crust.
Make sure to firmly press seals together.
3. Beat cream cheese, vanilla, egg and 1/2 cup sugar
with electric mixer on medium until well blended and
spread onto crust.
4. Unroll remaining can of crescent dough onto large
sheet of wax paper. Pat out dough to form 13 x 9
rectangle, pressing seams together to seal. Invert
over cream cheese mix to form top crust. Discard wax
paper.
5. Bake 30-35 min or until golden brown. Combine
remaining 1/4 cup sugar and cinnamon in small bowl and
sprinkle over top before cutting.
