Quick Chicken Quesadillas

I put these together last night & they were super good!

Cook your chicken the way you normally do.
I boil mine, in a bit of water, minced garlic, s & p, until it's completely done.
Once it's done, shred it with a fork.
Put back into pot with a taco season packet. I use the Taco Bell kind.
Once the chicken is coated in the seasoning, take off of heat, then add shredded cheese. Use whatever you like. I used Cheddar. Stir until the cheese is melted.

In a skillet, melt a pat of butter, lay a flour tortilla in the skillet & spoon some of the chicken/cheese mixture. Fold the tortilla over, so it looks like a taco. Cook on each side until a little crispy. Every time you put a new tortilla in the skillet, be sure to put a pat of butter. Serve with sour cream & salsa.

  1. I have made these before with sauteed onions and gr. peppers in the chicken mix.... YUMMY
