Patti Labelle's Mac-n-Cheese

Denise has sent us this recipe.

I have never made this as I am not a big mac-n-cheese eater, but a friend had it at one of his parties when Patti's first cookbook came out and it was great. Fattening -but really good (and for a non-mac-n-cheese person that says a lot.)

~~~~~~~~~~~~~~~~~~~~~~~~~~~
Makes 4-6 servings.
1 tablespoon vegetable oil
1 lb of elbow macaroni
1 stick plus 1 tablespoon butter
1/2 cup shredded Muenster
1/2 cup shredded sharp cheddar
1/2 cup shredded Monterey jack
8 ounces Velveeta - cubed
2 cups half and half
2 large eggs - beaten
1/4 teaspoon seasoned salt
1/8 teaspoon pepper
Pre-heat over to 350. Butter a 2 ½ quart baking dish.
Cook noodles in water with the oil. Drain when done.
Mix shredded cheeses together in a bowl.
Melt stick of butter and stir into noodles.
Set ½ cup of shredded cheese to the side. Mix remaining cheese into noodles.
Add milk & eggs into noodles & cheese mix. Then add salt & pepper.
Place into baking dish and top with remaining shredded cheese & dot top with remaining 1 tablespoon of butter.
Bake about 35 min until bubbly.
(sorry Heather - totally not healthy!)
